medium-sized carrots

eggs
1 can (14 oz/398 ml)
crushed pineapple
13 cup
oil

Preparation
  1. Preheat oven to 350° F.
  2. Coarsely grate carrots; measure 2 cups and place in a 9" X 13" baking dish.
  3. Add eggs, pineapple, and oil. Sprinkle cake mix evenly into baking dish and gently mix. (The mixture doesn’t need to be stirred entirely).
  4. Bake 30 min, or until a toothpick comes out mostly clean, with a few crumbs on it. Serve warm, with ice cream, if desired.
